To make your legs more defined you should do exercises such as squats which is by far the most beneficial for your leg muscles.
Squats will work out your buttocks, hamstrings and quadriceps leading to a more defined and muscular leg. Leg presses are also quite beneficial for your quadriceps. Leg extensions are meant for the muscles n the front of the thighs and are more commonly done with the help of a machine.
Leg curls on the other hand are the opposite of the leg extension exercises and are meant for the hamstrings. Last but certainly not least you should do calf raises to develop your calf muscles.
